Pomegranate-Glazed Christmas Ribs

Pomegranate-Glazed Christmas Ribs

  • Total Time: 3 hours 20 minutes

Ingredients

  • 2 racks of beef back ribs (approximately 4 to 5 pounds)
  • 1 cup pure pomegranate juice, unsweetened
  • 1/2 cup honey
  • 2 tablespoons apple cider vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon smoked paprika
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • Salt and cracked black pepper to taste
  • 1/2 cup fresh pomegranate arils for garnish
  • 2 tablespoons chopped fresh parsley or mint for garnish

Instructions

  1. Preheat your oven to 300 degrees Fahrenheit. Pat the ribs dry with paper towels to ensure the spices stick. In a small bowl, combine the salt, pepper, smoked paprika, cinnamon, and ground ginger. Rub this spice mixture generously over both sides of the ribs, pressing it into the meat. Wrap the seasoned ribs tightly in heavy-duty aluminum foil, creating a sealed packet to trap the moisture during the long bake.
  2. Place the foil-wrapped ribs on a large baking sheet. Slide them into the oven and roast for approximately 2.5 to 3 hours. You want the meat to be very tender but not quite falling apart yet, as they will spend a few more minutes under the broiler later. This slow process allows the connective tissues to break down, resulting in a buttery texture.
  3. While the ribs are roasting, combine the pomegranate juice, honey, apple cider vinegar, and minced garlic in a small saucepan over medium heat. Bring the mixture to a gentle boil, then reduce the heat to low. Simmer the liquid for about 15 to 20 minutes, stirring occasionally, until it has reduced by half and becomes thick enough to coat the back of a spoon. Set this glaze aside to cool slightly.
  4. Carefully remove the ribs from the oven and open the foil packets, being cautious of the steam. Increase the oven temperature to a high broil setting. Brush a thick layer of the pomegranate glaze over the top of the ribs. Place the ribs back in the oven, uncovered, for 3 to 5 minutes. Watch them closely so the sugars in the glaze do not burn. Remove them once the glaze is bubbling and slightly charred in spots.
  5. Let the ribs rest for about 10 minutes before slicing. This allows the juices to redistribute so every bite is moist. Just before serving, brush on one final layer of the remaining glaze. Sprinkle the fresh pomegranate arils and chopped parsley over the top for a beautiful, festive presentation that screams Christmas.
