1 tablespoon canned pumpkin puree (optional, for color and texture)
1/2 teaspoon smoked paprika
1/8 teaspoon salt
1/8 teaspoon black pepper
12 small pieces of fresh chives or parsley stems (for the pumpkin stems)
Instructions
Place your eggs in a single layer in a saucepan and cover them with an inch of cold water. Bring the water to a boil, then immediately remove from heat, cover with a lid, and let them sit for 10 to 12 minutes. Transfer the eggs to an ice bath for 5 minutes to ensure they are easy to peel.
Carefully peel the eggs and slice them in half lengthwise. Gently scoop out the yolks and place them into a small mixing bowl. Use a fork to mash the yolks until they are fine and crumbly. Stir in the mayonnaise, mustard, pumpkin puree, smoked paprika, salt, and pepper until the mixture is smooth and creamy.
Spoon the yolk mixture back into the center of each egg white half. You can use a piping bag for a cleaner look, but a simple spoon works just as well. Smooth the top of the filling slightly so it has a rounded, pumpkin-like shape.
Use a toothpick or the back of a small knife to gently press vertical lines into the yolk filling to mimic the ridges of a pumpkin. Do this carefully so you do not smudge the filling too much. This small detail is what really makes the appetizer stand out.
Place a small piece of chive or a tiny sprig of parsley at the top of each egg to serve as the pumpkin stem. Dust the tops with a tiny bit of extra smoked paprika if you want a more vibrant orange finish.
